Description

With high prevalence of food allergy in Australia, allergen management is a significant food safety issue for food service providers, who exhibit poor knowledge and skills in this area. This session highlights the shared responsibility between consumers with food allergy, food service businesses, authorised officers, and food regulators. The National Allergy Council and Allergy & Anaphylaxis Australia present the consumer experience and best practice resources and training available for the food service industry and authorised officers. A regulatory authority will cover legal requirements. We will present an innovative approach to food allergen management training of food safety supervisors in NSW.
